摘要
随着我国社会经济的发展,消费者对食品安全和营养要求越来越高,化学保鲜剂的可用性受到挑战,中草药提取物保鲜剂来源丰富、安全无残留、无毒副作用,越来越受到消费者的青睐。主要介绍了中草药提取物的活性成分,提出其在食品中的防腐保鲜应用及发展方向。
With the development of social economy in China,consumers have higher and higher requirements for food safety and nutrition,and the availability of chemical preservatives has been challenged.Chinese herbal extracts preservatives are increasingly favored by consumers because of their rich sources,safety,no residue,and non-toxic side effects.This paper mainly introduced the active ingredients of Chinese herbal extracts and their application in food preservation.
