漳州市7个柚品种果实糖酸与肌醇含量分析

摘要 【目的】糖酸含量是柚类果实风味的重要指标,比较不同柚品种的果实糖酸与肌醇含量差异,对评定果实品质、评价栽培管理水平及柚类产业结构调整具有重要的指导意义。【方法】测定琯溪蜜柚、红肉蜜柚、钱德勒柚、坪山柚、文旦柚、翡翠柚和沙田柚等7个柚品种果实的果肉糖酸、肌醇含量及糖酸比。【结果】所测定的柚果实中,钱德勒柚酸含量最高;红肉蜜柚的果糖含量最高,坪山柚的葡萄糖含量最高,翡翠柚的蔗糖和总糖含量最高;坪山柚的肌醇含量最高。糖酸比从高到低依次是翡翠柚>沙田柚>红肉蜜柚>琯溪蜜柚>钱德勒柚>坪山柚>文旦柚。【结论】钱德勒柚呈高酸低糖特性,不太符合我国南方的饮食习惯;平和红肉蜜柚体现出高糖低酸的特性,这或许是其得以获得市场认可的一个重要的内在品质因素。坪山柚的肌醇含量最高,但含糖量不高,对有健康管理要求的人士而言是不错的选择。翡翠柚含糖量最高而酸度低,糖酸比最高风味浓郁且肌醇含量也高,同时因其果肉晶莹翠绿,在柚产业中相对比较新颖,具有一定的商业潜力,可进一步对优化柚类品种结构提供参考。 【Objective】The content of sugar and acid is one of the important indices of fruit flavor in pomelo.Comparison of sugar,acid and inositol content in fruits of different pomelo cultivars has important guiding significance for evaluating fruit quality and assessing cultivation management level and adjusting the industrial structure of pomelo.【Method】Sugar,acid and inositol content and ratio of sugar to acid in the fruits of seven pomelo varieties,including‘Guanximiyou’,‘Hongroumiyou’,‘Chandler’,‘Pingshanyou’,‘Wendanyou’,‘Feicuiyou’,and‘Shatianyou’were measured.【Result】Among all the pomelo cultivars,‘Chandler’had the highest content of acid.‘Hongroumiyou’had the highest content of fructose,‘Pingshanyou’had the highest content of glucose,‘Feicuiyou’had the highest of sucrose and total sugar and‘Pingshanyou’had the highest content of inositol.Cultivars with ratio of sugar to acid in descending order were‘Feicuiyou’,‘Shatianyou’,‘Hongroumiyou’,‘Guanximiyou’,‘Chandler’,‘Pingshanyou’and‘Wendanyou’.【Conclusion】Fruit of‘Chandler’had the highest content of acid and low content of sugar,so it was not in line with the dietary habits of people in southern China.Fruit of‘Hongroumiyou’had the highest content of sugar and low content of acid,and it could one of the important internal fruit quality factors to be recognized by the market.Fruit of‘Pingshanyou’had the highest content of inositol but low content of sugar and it could be a good choice for people with health management requirements.Fruit of‘Feicuiyou’had the highest content of sugar,low content of acid,the highest ratio of sugar to acid,rich flavor and high content of inositol.Moreover,it had crystal-clean and green fruit flesh,so it had unique flesh in pomelo industry and had some commercial potential.‘Feicuiyou’could provide references for optimizing cultivar structure of pomelo.
