广西几个葡萄品种成熟期果肉多酚含量及抗氧化活性的比较 被引量:1

Comparative Analysis of Polyphenol Content and Antioxidant Activity in Ripening Fruit Pulp of Various Grape Varieties in Guangxi

摘要 本研究以广西的“巨峰”、“夏黑”、“阳光玫瑰”、“温克”、“巨玫瑰”、“甬优一号”、“凌丰”、“野酿2号”毛葡萄和“新株系Y137”毛葡萄9个葡萄品种为研究对象,测定其成熟期果肉的多酚含量,比较其提取物对DPPH·自由基(2,2联苯基-1-苦基肼基)、超氧阴离子自由基(O_(2)^(·-))清除率以及葡萄多酚与抗氧化活性间的关系。结果显示,“野酿2号”毛葡萄、“新株系Y137”毛葡萄、“凌丰”和“温克”4个葡萄品种成熟期果肉多酚含量较高,同时抗氧化活性优于其他品种。 This study aimed to assess the polyphenol content in ripe fruit pulp of different table and wild grape varieties including“Kyoho”,“Summer black”,“Sunshine rose”,“Wenk”,“Giant rose”,“Yongyou No.1”,“Lingfeng”,“Wild grape No.2”,and“New strain Y137”grapes;to compare scavenging activity of extracts from the grapes against DPPH free radicals(2,2-conjugated phenyl-1-peptidyl sulfate)and superoxide anion(O_(2)^(·-))free radicals;to investigate the relationship between grape polyphenols and their antioxidant activity.The results revealed a correlation between the antioxidative activity of grapes and their polyphenol content.Grapes with higher polyphenol content exhibited greater antioxidative capability.Notably,during maturation,“Wild grape No.2”,“New strain Y137”,“Lingfeng”,and“Wenk”grapes displayed elevated fruit polyphenol content and superior antioxidant activity compared to the other grape varieties.
