摘要
玉米赤霉烯酮(ZEA)是一种由镰刀菌属真菌产生的具有脂溶性的致病性真菌毒素,广泛存在于小麦、玉米、花生和水稻等谷物中。因ZEA与雌激素结构相似,在动物体中表现出明显的生殖系统毒性,同时会诱发细胞中线粒体的氧化应激,降低机体免疫力。利用植物提取物的强抗氧化作用可以缓解ZEA对机体诱导的氧化应激和组织损伤。文章介绍了ZEA对动物体生殖系统的不利影响及其作用机制,详细阐述了番茄红素、原花青素等6种植物提取物对致病性真菌毒素的消除作用机制以及在实践中的应用现状,为后续植物提取物消除ZEA的研究提供参考。
ZEA is a fat-soluble pathogenic mycotoxin produced by Fusarium fungi,widely present in wheat,corn,peanuts and rice and other grains.Due to the similar structure of ZEA and estrogen,ZEA shows obvious toxicity to the reproductive system in animals,and can induce oxidative stress in the mitochondria of cells and reduce the immunity of the body.The oxidative stress and tissue damage induced by ZEA can be alleviated by the strong antioxidant effect of plant extracts.In the paper,the adverse effect of ZEA on animal reproductive system and its mechanism of action are introduced,and the mechanism of elimination of pathogenic mycotoxins by lycopene,proanthocyanidins and other six plant extracts are described in detail,as well as their application status in practice,to provide reference for the subsequent research on ZEA elimination by plant extracts.
