基于3D扫描测量面积的餐饮具微生物快速采样方法研究

摘要 目的基于3D(3 Dimensions)扫描测量全表面积,比较餐饮具微生物检测中整套采样与现行标准采样方法的差异,以改进餐具检测采样方法。方法激光3D扫描测量陶瓷标准球和餐具在涂膜前后的表面积,评定测量方法的准确度与精密度(CV);餐具染菌后,分别以整套荡洗和单个采样后检测回收菌数,比较两种采样方法的差异。结果3D扫描测量标准球表面积的偏差0.5%,涂膜增加表面积0.12%;测量筷子全表面积时3D扫描法比几何测算法小2.4%;同规格30套餐具测得平均总表面积1379 cm2,精密度为0.5%~2.0%。染菌回收试验中,大肠菌群的两种采样方法结果差异无统计学意义;沙门菌整套采样的回收菌数更多,整套采样法对餐具残存菌的检出率优于单个采样法。结论3D扫描法可准确测量餐饮具全表面积,餐具微生物检测中整套荡洗采样速度快,优于现行标准方法,便携式激光3D扫描仪适用于现场快速作业。 Objective To measure total surface area of tableware based on 3D(3 Dimensions)scanning and to compare results of microbiological testing between swingwashing sampling method and the current standard sampling method.Methods Total surface area was measured for aceramic reference sphere and a set of tableware based on 3Dscanning method both before and after coating.Accuracy and precision(CV)of the 3Dscanning measurement method were evaluated.After coating with bacteria,total bacterial count was measured by the swingwashing sampling method and the standard sampling method.Results of the two sampling methods were compared.Results The deviation of standard sphere surface areameasured by 3Dscanning was 0.5%,which was increased by 0.12%after coating.Total surface area of chopsticks measured by 3Dscanning was 2.4%smaller than that of geometric calculation.Based on 3Dscanning method,the average total surface area of 30 sets of tableware was 1379 cm2,with CV ranging between 0.5%to 2.0%.The differences in E.coli 8099 count under two sampling methods in the contaminated bacteria recovery test were not statistically significant.However,more S.ent colonies were recovered in the swingwashing sampling method than the standard sampling method.The detection rate of residual bacteria on tableware by the swingwashing sampling method was better than that by the standard sampling method.Conclusion 3D scanning method can accurately measure total surface area of tableware.Swingwashing is a rapid sampling method for the detection of tableware microbes.Portable 3D scanner might be suitable for fast field work.
