摘要
比较了多种木瓜皮、肉的总多酚、总黄酮含量及抗氧化活性大小。结果表明,木瓜皮总多酚含量介于7.04~102.24 mg/g,总黄酮含量介于5.29~228.28 mg/g,木瓜肉的总多酚含量介于5.66~59.70 mg/g,总黄酮含量介于0.69~120.23 mg/g。在这些木瓜中河南平顶山木瓜不同部位总多酚和总黄酮含量均相对最高。同时,木瓜皮与木瓜肉抗氧化活性相当。总之,不同木瓜皮、肉均有较高的酚类物质含量和抗氧化活性,而河南平顶山木瓜表现最突出,可将其综合开发为天然抗氧化剂的候选物。
The contents of total polyphenols,total flavonoids and antioxidant activity of papaya peel and pulp were compared.The results showed that the total polyphenol content of papaya peel ranged from 7.04 mg/g to 102.24 mg/g,the total flavonoid content ranged from 5.29 mg/g to 228.28 mg/g,the total polyphenol content of papaya pulp ranged from 5.66 mg/g to 59.70 mg/g,and the total flavonoid content ranged from 0.69 mg/g to 120.23 mg/g.Among these papayas,the total polyphenols and total flavonoids in different parts of the fruit of Pingdingshan in Henan Province were relatively highest.At the same time,papaya peel has comparable antioxidant activity to papaya pulp.In short,different varieties of papaya had high content of total polyphenols,total flavonoids and antioxidant activity in the peel and pulp,while the antioxidant activity and phenolic content of papaya fruit in Pingdingshan in Henan Province showed the most prominent antioxidant content,which could be comprehensively developed as a candidate for natural antioxidants.
