摘要
窖泥又被称为白酒发酵过程中的软黄金,对白酒的固态发酵起着至关重要的作用。通过制定科学合理的浓香型窖泥p H和铵态氮的测定方法,为窖泥质量的分析提供系统科学的方法规范,对浓香型白酒窖泥质量的提升研究工作有重大指导性的意义,有利于浓香型白酒品质提升和品质创新。
Pit mud,also known as soft gold in the process of Baijiu fermentation,plays a vital role in the solid-state fermentation of liquor.In this study,a scientific and reasonable method for the determination of pH and Ammonium nitrogen in Nongxiang pit mud was developed to provide a systematic and scientific method for the analysis of pit mud quality.It has great guiding significance for the improvement of pit mud quality of Nongxiang Baijiu,which is conducive to the quality improvement and quality innovation of Nongxiang Baijiu.
