食品生产过程中非食品化学物质应用的分析

摘要 人类在促进工业、农业和经贸发展的同时,也给环境和食品造成了污染。近年来,一些危害人类生命健康的重大食品安全事件不断发生。随着社会经济的发展和人们生活水平的提高,公众的食品安全意识日渐提升。HACCP(Hazard Analysis Critical Control Point)体系是世界上被广泛采用的控制食品安全危害的预防性食品安全管理体系,HACCP危险分析和关键控制点是指风险分析(HA)和关键控制点(CCP)的两个部分,它是国际公认的食品安全控制预防方法。从HACCP体系下食品生产企业使用清洗剂、消毒剂、润滑剂、添加剂等非食品化学物质的应用现状着手,探讨食品生产过程清洗剂、消毒剂、润滑剂以及添加剂等化学物质的正确使用方法,从而保证食品生产环节的安全,降低此类食品安全风险。 While promoting the development of industry,agriculture and economy,human beings have caused pollution to the environment and food.In recent years,some serious food safety incidents that endanger human life and health have occurred continuously.With the development of social economy and the improvement of people's living standards,the public's awareness of food safety is increasing.Hazard Analysis Critical Control Point(HACCP)is a widely used preventive food safety management system for controlling food safety hazards in the world.Hazard Analysis and Critical Control Point(HACCP)refers to two parts of risk Analysis(HA)and Critical Control Point(CCP),which is an internationally recognized method of food safety control and prevention.This paper starts from the application status of non-food chemicals such as detergents,disinfectants,lubricants,additives and other chemical substances used by food production enterprises under the HACCP system,and discusses the proper use of chemical substances such as detergents,disinfectants,lubricants and additives in the food production process,so as to ensure the safety of food production and reduce such risks of food safety.
