食品添加着色剂是为保持或改变食品颜色,以此增加人们对食品的喜好并刺激食欲。根据心理学家的分析,人们接受的外界信息中83%的印象来自视觉,因此外观颜色显得尤为重要。食品的外观色泽宜人往往更容易被消费者接受,销售价格也更高。本文就食品中着色剂检测标准进行分析比较,从方法原理角度探讨样品中着色剂提取方式与检测器类型比较。
Adding colorants to food is to maintain or change the color of the food,thereby increasing people's taste for food and stimulating appetite.According to psychologists'analysis,83%of the impression people receive from external information comes from visual perception,so appearance color becomes particularly important.The pleasant appearance color of food is often more easily accepted by consumers,and the selling price is also higher.This article analyzes and compares the detection standards for colorants in food,and explores the extraction methods and detector types of colorants in samples from the perspective of method principles.
