开花灌浆期低温对水稻籽粒蛋白质的影响 被引量:1

摘要 水稻是我国重要的粮食作物,其品质直接关系到人类健康,而蛋白质含量是稻米品质的重要指标之一。本研究基于人工气候室,开展水稻盆栽试验,分析不同低温发生时期、低温水平及低温持续时间对水稻籽粒蛋白质积累规律的影响。结果表明:低温处理后水稻籽粒蛋白质含量升高,且温度越低、低温处理时间越长,籽粒蛋白质含量升高越明显;低温处理后水稻籽粒蛋白质最大积累速率、平均积累速率、最大积累量均呈下降趋势,累积活跃生长期呈缩短趋势;低温对稻穗上部和下部籽粒蛋白质含量影响较大,穗中部的籽粒品质稳定性更强。 Rice is an important food crop in China,and its quality is directly related to human health,and protein content is one of the important indicators of rice quality.Based on an artificial climate chamber,this paper conducted a pot experiment to analyze the effects of different periods,levels,and durations of low temperature on the accumulation of rice grain protein.The results showed that grain protein content of rice increased after low temperature treatment,and the lower the temperature and the longer the low temperature treatment time,the more significant the grain protein content increased;after low temperature treatment,the maximum accumulation rate,average accumulation rate,and maximum accumulation amount of rice grain protein showed a downward trend,while the accumulation active growth period showed a shortened trend;low temperature had a significant impact on the protein content of the upper and lower grains of rice panicles,and the stability of grain quality in the middle of the panicle was stronger.
