神丹6号绿壳蛋鸡公鸡早期屠宰性能与肉品质研究

Carcass Traits and Meat Quality of Cocks of Shendan No.6 Green Shell Layer at Early Stage

研究旨在探明神丹6号绿壳蛋鸡公鸡早期屠宰性能与肉品质,为该配套系的公雏利用提供理论依据。以神丹6号绿壳蛋鸡出雏公鸡为素材,饲养至15周龄,每周测量屠宰性状,15周龄时,以母鸡为对照,测量屠体重、全净膛重,计算屠宰率、全净膛率,测量常规肉品质、肉营养成分,进行全净膛品尝评价。结果显示,神丹6号绿壳蛋鸡公鸡0~15周龄屠宰性能在中上等水平,消化系统发育良好,免疫系统发育良好;15周龄屠体重、全净膛重显著大于母鸡,肉品质比母鸡略差,但与其它多数鸡种相当,风味、口感较好。综合分析表明,神丹6号绿壳蛋鸡公鸡早期屠宰性能良好,肉品质良好,综合性能优于多数绿壳蛋鸡品种。

In current study,the carcass traits and the meat quality of cocks of Shendan No.6 green shell layer at early stage were determined to provide a theoretical basis for the utilization of male birds of this crossbreeding system.The newly hatched cocks of Shendan No.6 green shell layer were raised to 15 weeks of age.The carcass traits were measured every week.At 15 weeks of age,the carcass weight,whole carcass weight,dressing percentage and whole carcass percentage were measured,and the general meat quality,meat nutrient composition and the taste evaluation of whole carcass were measured,with hens as the control.The results showed that the carcass traits of cocks of Shendan No.6 green shell layer at 0~15 weeks of age was better than average,digestive system and immune organ developed well.At 15 weeks of age,the carcass weight and whole carcass weight were significantly bigger than those of hens;the meat quality was slightly worse than that of hens,but comparable to that of most other breeds;the flavor and taste of meat were good.The results indicated that the cocks of Shendan No.6 green shell layer at early stage have good carcass traits and meat quality.Its comprehensive performance is better than most of other green shell layer breeds.
