丝瓜皮多酚的提取及抗氧化性研究

摘要 丝瓜皮是丝瓜食用时的废弃物,含有丰富的多酚等多种活性物质。本文采用单因素结合响应面试验对超声提取丝瓜皮多酚的工艺条件进行优化,并研究其抗氧化性,为丝瓜皮多酚的开发利用提供理论指导。试验结果显示,超声辅助法提取丝瓜皮多酚最优工艺条件是料液比1∶16(g/mL),提取剂为76%乙醇溶液,提取温度63℃,提取时间30 min,在此条件下丝瓜皮多酚的实际得率为10.13 mg/g。当丝瓜皮多酚浓度为0.6 mg/mL时,对DPPH和羟基自由基的清除率分别为92.8%和88.17%,表明丝瓜皮多酚有较好的抗氧化性,是一种很好的天然抗氧剂。 In this paper,single factor combined with response surface methodology was used to optimize the ultrasonic-assisted extraction process of polyphenols from luffa peels,and its oxidation resistance was evaluated,which provided technical support for the development and utilization of the polyphenol in luffa peels.The results showed that the optimum ultrasonic assisted extraction conditions were as follows:solid-liquid ratio 1∶16(g/mL),ethanol volume fraction 76%,extraction tempretrue 63℃and extraction time 30 min.Under the optimal process conditions,the actual yield of polyphenols from luffa skin was 10.13 mg/g.The scavenging rate of DPPH and hydroxyl radicals was 92.8%and 88.17%respectively when the polyphenol concentration of luffa peels was 0.6 mg/mL,which indicated that the polyphenol in luffa peel had good oxidation resistance and was a good natural antioxidant.
