混合营养素固体饮料中维生素B_(2)的稳定性研究

摘要 采用高效液相色谱法,通过影响因素试验及加速试验研究混合营养素固体饮料中维生素B_(2)的稳定性,以及通过研究pH和金属离子对该产品溶液中维生素B_(2)稳定性的影响,验证产品储藏条件,并科学指导消费者贮存及服用此类产品。试验结果表明,高湿、光照及碱性条件对产品中维生素B_(2)稳定性有较显著影响,而温度、酸性条件及金属离子铁、锌、钙对其影响较小。产品所采用的包装材质在贮存过程中可以很好地保护产品中维生素B_(2)的稳定性,在有效期内产品质量符合规定要求。 In order to verify the storage condition of mixed nutrient solid beverages,and to scientifically guide consumers to store and take such products,the stability of vitamin B2 in mixed nutrient solid beverages was studied through influencing factors tests and accelerated tests by HPLC,and the effect of pH and metal ions on the stability of vitamin B2 in the product was studied by HPLC.The results showed that high humidity,light and alkaline had a significant impact on the stability of vitamin B2 in the product,while temperature,acidic and metal ions iron,zinc and calcium had a small impact on it.The packaging used for this product could well protect the stability of vitamin B2 in the product during storage,and the product quality met the specified requirements within the validity period.
