摘要
首次尝试采用INFOGEST的体外消化模型,模拟人体胃肠消化环境,对选择水解乳清蛋白作为蛋白来源的特殊医学用途全营养配方食品(以下称为:肽类配方)和市售的蛋白来源为整蛋白(浓缩乳清蛋白+酪蛋白)的同类特殊医学用途全营养配方食品(以下称为:整蛋白配方)作对比,分析蛋白消化的差异。两款产品在消化初始(0 min)、胃消化结束(120 min)、肠消化结束(240 min)时的蛋白消化率结果分别为:肽类配方45.3%,70.1%和90.5%;整蛋白配方2.5%,41.5%和74.8%。结果表明:肽类配方的消化率明显高于整蛋白配方,INFOGEST体外模拟方法可靠,接近人体消化的实际情况,适用于FSMP产品的筛选和评价。
This is the first time to use INFOGEST static in vitro simulation of gastrointestinal digestion.It is to conduct a comparative study on the protein digestion of two foods for special medical purpose(FSMP):peptide formula whose protein source is hydrolyzed whey protein,and commercially available integral protein formula whose protein source is integral protein(whey protein concentrate and casein).The results of protein digestibility of two products at the initial digestion(0 min),the end of gastric digestion(120 min)and the end of intestinal digestion(240 min)are:peptide formula 45.3%,70.1%,and 90.5%;integral protein formula 2.5%,41.5%,and 74.8%.The results show that the digestibility of peptide formula is significantly higher than that of integral protein formula.INFOGEST model is reliable and close to the actual situation of human digestion,which is suitable for screening and evaluation of FSMP products.
