安徽省消毒餐饮具安全现状分析

Analysis on the Safety Status of Disinfected Tableware in Anhui Province

摘要 为了对安徽省消毒餐饮具的安全状况进行分析,按照GB 14934—2016要求,对安徽省各地的不同类型餐饮企业的消毒餐饮具进行采样和检测,并对大肠菌群和阴离子合成洗涤剂的不合格情况进行分析。结果显示全年总不合格率为17.15%,大肠菌群不合格率为8.37%,阴离子合成洗涤剂不合格率为8.79%;大型餐馆的不合格率最低,为7.44%,小型餐馆的不合格率最高,为26.29%;同时对于大肠菌群和阴离子合成洗涤剂的不合格率来说,大型餐馆也最低,小型餐馆最高;但大型餐馆的阴离子洗涤剂不合格率明显高于其大肠菌群不合格率,这与小型餐馆的不合格率正好相反。餐饮服务企业应根据自身实际情况,合理选择消毒和清洗方式,并加强人员操作规范,以提高餐饮具安全状况。 In order to analyze the safety status of disinfected tableware in Anhui province,according to GB 14934—2016 requirements,sampling and testing of disinfected tableware from different types of catering enterprises in Anhui province,and analyzing the unqualified situation of coliform bacteria and anion synthetic detergent.The results show that the total annual unqualified rate of disinfected tableware is17.15%,The unqualified rate of coliform bacteria is 8.37%,and the anion synthetic detergent is 8.79%.The unqualified rate of large restaurants was the lowest(7.44%),while the unqualified rate of small restaurants was the highest(26.29%).For the unqualified rate of coliform bacteria and anion synthetic detergent,the lowest is in large restaurants,and the highest is in small restaurants.However,the unqualified rate of anion synthetic detergent in large restaurants is significantly higher than that in their coliform bacteria,this unqualified rate is exactly the opposite of the situation in small restaurants.Catering service enterprises should choose reasonable disinfection and cleaning methods based on their actual situation,and strengthen personnel operation standards to improve the safety of disinfected tableware.
