摘要
邮轮从运营角度看属于乘客度假区,在保证船上人员安全及食品卫生的同时需满足船上数千人的用餐,而厨房是大型邮轮上制作餐食的重要区域,国内缺乏邮轮厨房相关的设计经验。对此,以某大型邮轮为例,介绍其厨房的设计流程及其要点,为同类型的船舶的设计和运营提供参考。
Cruise has the function of holiday resort for passengers,While ensuring personal safety and food hygiene on board,it is also to meet the meals of thousands of people on board.The galley is the important area for making meals on large cruise.Lack of design experience related to cruise galley.A cruise is taken as the example to explain the complete process of galley design and key point to provide reference for the design and construction of similar ships.
