黄粉虫不同酶解液及其抗氧化作用的比较研究

The Study on Total-antioxidant Capacity of the Enzyme-lysates of Tenebrio molitor L.

以黄粉虫为原料,利用减提酸沉法提取黄粉虫蛋白,并选取不同的酶对黄粉虫蛋白进行酶解,分析比较其酶解液中多肽含量、SOD酶活及总抗氧化能力。结果表明,黄粉虫蛋白分别经胰蛋白酶、碱性蛋白酶和木瓜蛋白酶酶解后其多肽得率分别为79.6%,60.4%,64.8%;SOD酶活力分别为82.03,82.73,82.31 U/m L;黄粉虫胰蛋白酶酶解液的总抗氧化能力为:相当于1.5753 mmol/L的FeSO_(4),0.9173 mmol/L的Trolox;碱性蛋白酶酶解液的总抗氧化能力为:相当于1.0383 mmol/L的FeSO_(4),0.8810 mmol/L的Trolox;木瓜蛋白酶酶解液的总抗氧化能力为:相当于0.9394 mmol/L的Fe SO4,0.7466 mmol/L的Trolox。黄粉虫不同酶解液都具有一定的抗氧化活性,其胰蛋白酶酶解液多肽得率较高,总抗氧化能力较强。

In this experiment,the protein was extracted from Tenebrio molitor L used as raw materials with the method of Subtraction acid precipitation and the content of polypeptide and the vitality of SOD and the total-antioxidant capacity of enzyme hydrolysates were analyzed.The results showed that the polypeptide yield of hydrolysates of Tenebrio molitor protein hydrolyzed with the trypsin,alkaline protease and papain were 79.6%,60.4%,64.8%.The activity of SOD in the hydrolysates were 82.03,82.73,82.31 U/m L respectively.The FeSO_4-equivalent and the Trolox-equivalent antioxidant capacity of hydrolyzates with trypsin,alkaline protease and papain were 1.575 3 mmol/L and 0.917 3 mmol/L,1.038 3 mmol/L and 0.881 0 mmol/L,0.939 4 mmol/L and 0.746 6 mmol/L,respectively.Different hydrolysates of Tenebrio molitor had certain antioxidant activity,especially in the trypsin hydrolysate had higher peptide yield and stronger total antioxidant activity compared to the others.
