辣椒作为人们日常生活中重要的蔬菜和调味品,其食用的安全性是全世界比较关注的问题。目前辣椒的农药残留问题已成为制约辣椒产业发展的重要因素。因此,建立辣椒的生态化种植体系和制定完善的辣椒农药残留限量标准是解决辣椒农药残留问题的必要手段。文章主要从辣椒中农药残留种类、农药残留超标、残留检测技术、风险评估方面进行了综述,同时还比较了国内外有关辣椒农药残留的限量标准。旨在为辣椒中农药残留的检测、监控和食品质量安全监管体系提供参考。

As an important vegetable and condiment in daily life,the safety of pepper is a problem of concern all over the world.At present,the problem of pesticide residue in pepper has become an important factor restricting the development of the pepper industry.Therefore,it is necessary to establish an ecological planting system for pepper and formulate a perfect pesticide residue limit standard for pepper.This paper mainly summarizes the types of pesticide residues on pepper,pesticide residues exceeding the standard,residue detection technology,risk assessment,and compares the limit standards of pesticide residues on pepper at home and abroad,aiming to provide a reference for the detection,monitoring and food quality and safety supervision system of pesticide residues on pepper.
