摘要
工程教育专业认证要求食品科学与工程专业培养能够解决食品复杂工程问题的食品工程师,“畜产食品工艺学”是食品科学与工程专业的一门重要核心课程,按照传统的教学模式已不能满足工程教育专业认证的要求,因此需要对该课程进行教学改革。从课堂教学、实验教学和评价方式等三个方面初步探讨了“畜产食品工艺学”在工程教育专业认证背景下的课程改革模式,重点探讨了翻转课堂和课程思政在新的教学模式下对课程目标达成的推动作用,以期为同类课程的教学改革提供参考。
Engineering education certification requires food science and engineering majors to culture food engineers who can solve complex food engineering problems.“Livestock Food Processing Technology”is one of the important core courses of food science and engineering.Traditional teaching methods on this course can not meet the requirements of engineering education certification.Therefore,teaching reform is needed.This paper discussed the classroom teaching reform,the experimental teaching reform and the evaluation methods reform in order to study the teaching reform of“Livestock Food Processing Technology”under the background of engineering education certification.Importantly,this paper focused on the role of flipped classroom and curriculum ideology and politics in promoting curriculum objectives under the new teaching mode.It will provide reference for the teaching reform of similar courses.
