摘要
目的:了解山东省淄博市学校周边熟制米面制品食源性致病菌的污染状况,旨在发现食品安全隐患,为监管部门采取有针对性的控制措施提供科学依据。方法:从淄博市9个监测区县采集180份学校周边熟制米面制品,按照国家标准方法进行6种微生物检验。结果:180份样品食源性致病菌检出率为7.78%(14/180)。夹心类食品检出率较高,为14.75%(9/61),其次为凉拌类,检出率为6.90%(4/58),其他类食品检出率为1.64%(1/61)。蜡样芽孢杆菌、沙门氏菌及金黄色葡萄球菌检出率较高,分别为7.22%(13/180)、1.67%(3/180)、1.11%(2/180),其他致病菌也有不同程度检出。不同类别学校检出率差异有统计学意义(P<0.05),高中学校周边熟制米面制品检出率较高,为13.56%。结论:淄博市学校周边熟制米面制品受到不同程度食源性致病菌污染,尤其是夹心类、凉拌类食品存在食品安全隐患,应加强监管力度,有效预防学校发生食源性疾病事件。
Objective:Investigate the contamination of foodborne pathogens in cooked rice and flour products around schools in Zibo city Shandong province to discover potential food safety hazards and provide scientific basis for regulatory authorities to take targeted control measures.Method:180 cooked rice noodle products were collected from 9 monitoring districts and counties in Zibo city,and 6 kinds of microorganisms were tested according to the national standard method.Result:The detection rate of food-borne pathogens was 7.78%(14/180).The detection rate of sandwich food was 14.75(9/61),followed by 6.90%(4/58)of cold mix,and 1.64%(1/61)of other food.The detection rates of Bacillus cereus,Salmonella and Staphylococcus aureus were 7.22%(13/180),1.67%(3/180)and 1.11%(2/180),respectively.Other pathogenic bacteria were also detected to varying degrees.The detection rate of cooked rice noodle products in different schools was statistically significant(P<0.05),and the detection rate of cooked rice noodle products around high school was 13.56%.Conclusion:Cooked rice and noodle products around schools in Zibo city were contaminated by foodborne pathogens in different degrees,especially sandwich and salad foods,which has food safety risks.Supervision should be strengthened to effectively prevent foodborne diseases in schools.
