摘要
在烘焙食品业的迅猛发展下,食品添加剂的运用范围日渐丰富,其在烘焙食品面团制作工艺性能的优化、比容积的提高、产品的延缓变质、品质的优化、成品率的增长以及劳动生产率的增强等方面有着重要作用。但是,若不能合理使用食品添加剂,不仅会影响面团的品质等,还会危害人们的身体健康。因此,进一步强化烘焙食品添加剂的应用及检测十分重要。本文分析了目前焙烤食品中添加剂的使用情况和烘焙食品添加剂的检测手段,并提出了烘焙食品添加剂检测的相应改进意见。
With the rapid development of the bakery food industry,the application of food additives is increasingly rich.They play an important role in optimizing the production process performance of baked goods dough,improving specific volume,delaying product deterioration,optimizing quality,increasing yield,and enhancing labor productivity.However,if the use of food additives is not reasonable or excessive,it will not only affect the quality of dough,but also endanger people’s health.Therefore,it is very important to further strengthen the application and detection of additives in baked food.This paper analyzes the current use of additives in baked goods and the detection means of additives in baked goods,and puts forward the corresponding improvement suggestions for the detection of additives in baked goods.
