摘要
硒是人体所必需的微量元素之一,对癌症和神经系统等疾病的防治具有一定的作用。我国的富硒食品主要包括富硒大米、肉制品、鸡蛋、茶、酵母以及食用油等。人体长期硒缺乏,会影响身体健康。基于此,本文综述了富硒食品的生理学功能、食品类别、常见的市售富硒食品以及富硒食品的研究现状。
Selenium is one of the essential trace elements of human body,and has certain effects on the prevention and treatment of diseases such as cancer and nervous system.Selenium-rich foods in China’s mainly include selenium-rich rice,meat products,eggs,tea,yeast and edible oil.The lack of selenium in human body for a long time will affect health.Based on this,the physiological function,food categories,common commercial seleniumrich foods and research status of selenium-rich foods were reviewed in this paper.
