火龙果果汁澄清剂筛选及其澄清工艺的优化

Screening of Clarifiers for Pitaya Juice and Optimization of Clarification Process

摘要 以火龙果果汁为试验材料,采用5种澄清剂(复合酶、果胶酶、壳聚糖、明胶、皂土)对火龙果汁进行单因素试验和正交试验,确定最佳澄清剂和澄清工艺。从经济性、便利性、澄清后的果汁质量3个角度来看,壳聚糖为最佳澄清剂,其最佳工艺条件为壳聚糖1.6 g/L、处理温度35℃,处理时间70 min,制得的果汁清澈、均匀,其火龙果汁透光率大于95%。试验结果对进一步开发和利用火龙果具有理论指导意义。 Five kinds of clarifiers such as compound enzyme,pectinase,chitosan,gelatin and bentonite were used to make single factor experiment and orthogonal experiment on dragon fruit juice,and the clarifier and clarification process were determined.From the perspective of economy,convenience and clarified fruit juice quality,chitosan was the best clarifier.The best production condition was as follows:1.6 g/100 mL of chitosan,35 C of treatment temperature,and 70 min of treatment time.The prepared fruit juice was clear and uniform,and the light transmittance of fire dragon fruit juice was more than 95%.It had certain reference significance for the further development and utilization of fire dragon fruit.
