油脂氧化对水产动物影响的研究进展

摘要 水产饲料是水产养殖行业发展的主要因素之一,为满足国民日益增长的水产品需求提供有力支持。油脂(尤其是鱼油)作为水产饲料中一种重要原料,因其富含不饱和脂肪酸而极易氧化,并产生各种氢过氧化物和二次氧化产物(包括醇、酮、醛等)。此外,该过程也导致油脂本身的化学特征发生改变。实际生产和养殖中,油脂氧化导致养殖鱼类生长下降甚至影响健康。文章综述了国内外学者对油脂氧化的研究,探讨油脂氧化对各种鱼的影响与作用机制及常见抗氧化剂应用效果,为进一步研究氧化油脂对水产动物的影响积累基础资料。 Aquatic feed industry is one of the main factors in the development of aquaculture industry,providing strong support to meet the growing demand for aquatic products.As an important raw material in aquatic feed,lipid(especially fish oil)is easily oxidized due to its rich unsaturated fatty acids,and produces various hydroperoxides,secondary oxidation products(including alcohols,ketones,aldehydes,etc.).In addition,the oxidation process also leads to changes the oil chemical characteristics.In feed in⁃dustry and aquaculture,lipid oxidation could impair growth and health of fish.This paper summarizes the research on oil oxidation by scholars at home and abroad,discusses the effect and mechanism of oil oxidation on various kinds of fish and the application effect of common antioxidants,so as to accumulate basic data for further research on the effect of oxidized oil on aquatic animals.
