对外传播视角下应用型本科院校ESP课程建设实践——以四川旅游学院烹饪英语课程为例

Practice of ESP Course Construction in Application-oriented Colleges from the Perspective of International Communication——Taking“Culinary English”of Sichuan Tourism University as an Example

饮食文化是最能代表中国文化的元素,在中国文化的对外传播中占据重要地位。文章从国家的对外传播策略出发,从人才培养、课程建设和教学实践等角度探讨应用型本科高校烹饪相关专业的烹饪英语ESP课程的相关问题。学生反馈表明,课程内容设置合理,基本达到预设的教学目标,学生反应正面积极。但作为一门新课,需要在未来持续更新改进,为外语教育和国际文化传播做出积极贡献,增强学生的跨文化认知和国际综合素质,推动中国饮食文化传播与中餐产业的全球化发展。

Chinese food culture,the most representative element of Chinese culture,plays an important role in its international communication.This paper discusses some issues related to“Culinary English”,an ESP course for culinary-related majors in application-oriented colleges from the dimensions of talent cultivation,course construction,and teaching practice.Students feedback shows that the course content is reasonable and has basically achieved the preset teaching objectives,receiving positive responses from the students.However,there are still some problems in this new course.In order to contribute positively to foreign language education and the dissemination of international culture,continuous updates and improvements are essential in the future.These efforts will enhance students cross-cultural cognition and comprehensive international qualities,while also promoting the dissemination of Chinese food culture and the globalization of the Chinese food industry.
