摘要
杜仲叶为我国特有的经济物种杜仲的干燥叶,属于药食两用试点物质,应用前景广阔。近年来,针对杜仲叶发酵已经开展了大量研究。该文对杜仲叶发酵后的成分变化、功能应用进行了总结,以期为今后杜仲叶发酵的综合开发利用提供参考。
Eucommia ulmoides leaves are the dried leaves of Eucommia ulmoides,an economic species unique to China,which belong to the pilot substances for both medicine and food,and have broad application prospects.In recent years,a lot of research has been carried out on the fermentation of Eucommia ulmoides leaves.This paper summarized the compositional changes and functional applications of fermentation of Eucommia ulmoides leaves with a view to providing reference for the comprehensive development and utilization of Eucommia ulmoides leaves fermentation in the future.
