摘要 微冻技术是指将食材通过(超)低温微冻液进行冻结贮藏并实现保鲜的一种新型食材锁鲜保藏方法,可应用于农产品、水产品及各类畜禽肉类产品的保鲜,可为医疗机构生物样品提供冷冻保存,可开展基于冷诱导技术的作物育种。本文介绍了微冻保鲜技术的特点、研究应用进展,旨在为农/水产品和畜禽肉类产品的贮藏保鲜提供新技术,为微冻技术应用于更广泛领域提供参考。 Micro-freezing technology is a new solution for freezing and storing food materials through ultra-low temperature or low temperature micro-freezing liquid.It can be applied to the preservation of agricultural products,aquatic products and various livestock and poultry meat products.It can also freeze and preserve biological samples from medical institutions,and can carry out crop breeding based on cold induction technology.This paper introduces the characteristics and application progress of micro-freezing preservation technology,aiming at providing a new technology for the storage and preservation of agricultural products,aquatic products,and livestock and poultry meat products,and provides references for the application of micro-freezing technology in a wider range of field.
