2021年四川省餐饮服务单位碘盐使用状况调查结果分析

Analysis on the survey results of iodized salt use in catering service units in Sichuan Province in 2021

目的了解企事业单位食堂以及不同规模餐馆的合格碘盐食用情况,为适时采取针对性防治措施和科学调整干预策略提供依据。方法2021年在四川省抽取10个县(市、区)作为调查县,在每个县抽取2个企事业单位食堂,以及5家中型餐馆和5家小型餐馆,采集其食用盐样检测盐碘含量,以了解这些餐饮服务单位的碘盐覆盖率、合格碘盐覆盖率、碘盐合格率等情况。率的比较采用卡方检验,以P<0.05为差异有统计学意义。结果四川省共调查600家餐饮服务单位,检测600份盐样,碘盐覆盖率99.5%,合格碘盐覆盖率97.3%,碘盐合格率97.8%,食用盐碘中位数26.9 mg/kg,省级不同餐饮性质和服务类型餐馆合格碘盐覆盖率均>99%。结论四川省餐饮服务单位的碘盐覆盖率、合格碘盐覆盖率和碘盐合格率均大于95%,总体较良好。

Objective To understand the consumption of qualified iodized salt in canteens of enterprises and public institutions and restaurants of different scales with counties/cities/districts taken as the units for this survey,and to provide basis for taking targeted prevention and control measures and adjusting intervention strategies scientifically.Methods Ten counties/cities/districts were selected in Sichuan Province in 2021.In each county/city/district,two canteens of enterprises and public institutions,five medium-sized restaurants and five small restaurants were selected to collect salt samples for iodine content detection to understand the coverage rate of iodized salt,the coverage rate of qualified iodized salt and the qualified rate of iodized salt in these catering service units.Chi-square test was used for comparison of rates,and P<0.05 was considered statistically significant.Results A total of 600 catering service units were investigated and 600 salt samples were tested in Sichuan Province.The coverage rate of iodized salt was 99.5%,the coverage rate of qualified iodized salt was 97.3%,and the qualified rate of iodized salt was 97.8%.The median iodine of edible salt was 26.9 mg/kg.The coverage rates of qualified iodized salt were all above 99%of provincial restaurants of different catering properties and service types.Conclusions The coverage rate of iodized salt,the coverage rate of qualified iodized salt and the qualified rate of iodized salt in catering service units in Sichuan Province were all above 95%,which was generally good.
