摘要
介绍了红曲色素的提取与分离纯化方法;总结了红曲色素结构及性质表征的常用手段;从体外实验和动物实验两方面归纳了红曲色素功效评估的研究概况;分析了当前红曲色素在组分分析与功效评估方面的发展趋势。
This paper introduces the extraction,separation and purification methods of Monascus pigments.The characterization methods for the structure and properties of Monascus pigments are summarized.Subsequently,the research overview of the efficacy evaluation of Monascus pigments is elaborated from both in vitro and animal experiments.Finally,the current development trend of Monascus pigments in component analysis and efficacy evaluation is analyzed.
