摘要
为了探讨电子鼻技术评选香菇杂交后代香味品质的效果,以传统感官法为对照,应用该技术评价分析了香菇商品菌株L808和野生菌株YX7,以及19个两者杂交后代的香味品质,同时采用气相色谱-质谱联用技术(GC-MS)定量分析了其香菇素含量。结果表明,电子鼻分析与感官评价结果具有良好对应关系,2种方式筛选出的具较高香味品质的11个香菇菌株完全一致。电子鼻传感器W2W和W1W的响应值均显示与GC-MS测定的香菇素含量呈显著正相关关系。电子鼻主成分分析还将21个香菇菌株划分为不同香味类型,并筛选出与野生菌株YX7具相似浓郁香味的杂交后代菌株。可见,电子鼻技术是一种有效的香味品质评价方法,可用于优良香味品质香菇杂交后代的快速初步筛选。
In order to study the effect of electronic nose technique on the evaluating the aroma quality of Lentinula edodes hybrids,the aroma quality of commercial strain L808 and wild strain YX7,as well as 19 hybrid strains were evaluated by this technique,and analyzed by using the traditional sensory method as the contrast.Meanwhile,the lenthionine contents was quan-titatively analyzed by gas chromatography-mass spectrometry(GC-MS).The results indicated that,there was a good correspon-dence between electronic nose analysis and sensory evaluation,as both screened out the same 11 strains of L.edodes with better aroma quality.The response values of electronic nose sensors W2W and W1W were significantly positively correlated with the content of lenthionine detected by GC-MS.According to the principal component analysis of data from electronic nose,the 21 strains were classified into 4 groups with different aroma types,and hybrids with similar aroma to the wide strain YX7 were se-lected out.Therefore,the electronic nose technique is an effective method to evaluate the aroma quality of L.edodes,and it can be used to screen the hybrid strains of L.edodes with good aroma quality.
