摘要
依据ISO 5553∶1980优化薄层色谱方法测定条件,扩大适用范围至水产品,建立肉制品与水产品中聚磷酸盐的测定方法,并通过制备阳性/阴性样品对方法的可靠性进行实验室间比对验证。焦磷酸盐、三磷酸盐、六偏磷酸盐含量不低于0.5 g/kg时,阳性检测结果具备100%的可靠性。实验室间比对验证结果一致性良好,方法适用于肉与水产及其制品中聚磷酸盐的测定。该方法简便、快速、重复性好,可作为其他定量方法的补充验证,为打击食品掺假或添加剂超量使用等违法违规行为提供检验依据,以期满足日益增长的食品安全监管需求。
According to ISO 5553∶1980,a method for the detection of condensed phosphates in meat and aquatic products had been established and validated by optimizing the detection conditions and expanding the scope of application to aquatic products.Reliability of the established method was verified through interlaboratory tests by preparing positive/negative samples.The positive test results were reliable when the contents of diphosphate,triphosphate,and hexametaphosphate were not less than 0.5 g/kg.The results of interlaboratory tests showed high consistency,indicating that the method was suitable for the detection of condensed phosphates in meat,and aquatic products.This method based on thin layer chromatography was simple,fast,reliable,especially as“screening technique”.It can be used as a supplementary means for other quantitative methods and can be a testing basis for cracking down on illegal and irregular behaviors such as food adulteration or excessive use of food additives,to meet the growing demand for food safety supervision.
