超高效液相色谱-串联质谱法测定菠萝中11种酚酸

摘要 为了探明菠萝中酚酸的种类及含量,本研究采用超高效液相色谱-串联质谱法对菠萝果肉样品进行分析。结果表明:该方法灵敏性高、线性范围宽、检出限低,可以有效提高检测效率。菠萝中存在多种酚酸,包括游离型、游离酯型和结合型,且菠萝中的不同酚酸含量存在明显差异。其中异阿魏酸和反式肉桂酸含量较高,芥子酸、对香豆酸、咖啡酸、丁香酸、对羟基苯甲酸、3,5-二羟基苯甲酸、香草酸、鞣花酸和水杨酸含量次之。本研究对菠萝中的酚酸进行了定量分析,为评价菠萝的营养成分和功能活性物质提供了一定的参考。 In order to investigate the types and content of phenolic acids in pineapple,this study used ultra high performance liquid chromatography-tandem mass spectrometry to analyze pineapple pulp samples.The results showed that this method had high sensitivity,wide linear range,and low detection limit,which could effectively improve detection efficiency.There were various phenolic acids in pineapple,including free type,free ester type,and bound type,and there were significant differences in the content of different phenolic acids in pineapple.Among them,the contents of isoferulic acid and trans cinnamic acid were higher,followed by the content of erucic acid,para coumarin acid,caffeic acid,syringic acid,para hydroxybenzoic acid,3,5-dihydroxybenzoic acid,vanillic acid,ellagic acid,and salicylic acid.In this study,the phenolic acids in pineapple were quantitatively analyzed,which provided references for evaluating the nutritional components and functional active substances of pineapple.
