摘要
研究高温熟化、护色浸泡、热水烫漂、浸泡烫漂4种不同预处理对热风干燥文成山药粉理化特性的影响。结果表明:高温熟化、护色浸泡、热水烫漂、浸泡烫漂处理使山药粉中的多糖含量降低。烫漂处理使山药粉的b值增大。高温熟化、烫漂处理使山药的糊化起始温度、峰值温度、晶体糊化焓显著降低。
The effects of four different pretreatments on the physicochemical properties of Wencheng Rhi-zoma Dioscoreae powder were studied.The results showed that the content of polysaccharide in Rhizoma Dioscoreae powder decreased after high temperature curing,color protection soaking,hot water blanching and soaking blanching.Blanching treatment increased the b value of Rhizoma Dioscoreae powder.The gelatinization initial temperature,peak temperature and crystal gelatinization enthalpy of Rhizoma Di-oscoreae powder decreased significantly after high temperature curing and blanching treatment.
