摘要
近年来,食品安全问题引起了公众的广泛关注,如食品中的药物残留、毒素残留及微生物污染等,这些问题严重威胁着人体健康。因此,确保食品的安全性与质量至关重要。微生物检测作为食品安全监管的有效手段之一,能够及时发现食品中的安全问题,有效预防食品安全事件的发生。本文阐述酶联免疫吸附法的原理、常见类型及操作步骤,及其在食品微生物检测中的应用,以期为食品安全检测提供有力保障与科学依据,提高食品安全检测的效率与准确性,保障公众的食品安全。
In recent years,food safety issues have aroused widespread public concern,such as drug residues,toxin residues and microbial contamination in food,which seriously threaten human health.Therefore,it is very important to ensure the safety and quality of food.As one of the effective means of food safety supervision,microbial detection can find safety problems in food in time and effectively prevent the occurrence of food safety incidents.This paper describes the principle,common types and operation procedures of enzyme-linked immunosorbent assay,as well as its application in food microbial detection,in order to provide a strong guarantee and scientific basis for food safety detection,improve the efficiency and accuracy of food safety detection,and ensure the public’s food safety.
