摘要 我国果蔬产量高、品种丰富、果蔬产业持续发展,但果蔬采后存在自身品质下降、病原菌侵袭以及采摘和运输过程中易引起机械损伤等问题。该文简述果蔬采后的生理变化,综述物理技术在果蔬保鲜中的应用并进行探讨,旨在为果蔬的保鲜提供参考。 China's fruit and vegetable industry is characterized by high yields,rich varieties,and strong vitality.However,there are problems such as the decline in quality,pathogen infection,and mechanical damage during harvest and transportation.The physiological changes in fruits and vegetables after harvest were introduced,and the application of physical technology in this field was reviewed,which provided a reference for the preservation of fruits and vegetables.
