摘要
该文以俄色蜂蜜、山马蓝蜂蜜和松树蜂蜜3种甘孜州特色中蜂蜂蜜为研究对象,测定了蜂蜜中的总酚含量、抗氧化能力和抑菌活性,并与2种不同级别的麦卢卡蜂蜜进行对比分析。结果表明,甘孜州3种特色中蜂蜂蜜中,山马蓝蜂蜜的总酚含量(75.31±5.97mg GAE/100g)和总抗氧化能力最高(3893.39±173.79μg/100g),均仅次于麦卢卡20+蜂蜜;对金黄色葡萄球菌的抗菌能力由强到弱依次为:俄色蜂蜜>松树蜂蜜>麦卢卡20+蜂蜜>麦卢卡12+蜂蜜>山马蓝蜂蜜。3种中蜂蜂蜜的抗氧化能力与抑菌能力、色泽呈显著正相关(r>0.832,P<0.05),总酚含量和色泽呈极显著正相关(r=0.837,P<0.01),电导率和麦芽糖含量呈极显著正相关(r=0.910,P<0.01)。
The object ofthis study was to determine the total phenolic content,antioxidant and antimicrobial activities of three kinds of Apis cerana honey(Strobilanthes oresbia honey,Malus bhutanica honey and Pinus honey)from Ganzi Prefecture and to compare it with two types of manuka honey.The results showed that the total phenolic content(75.31±5.97 mg GAE/100g)and total antioxidant capacity(3893.39±173.79μg/100g)of Strobilanthes oresbia honey was second only to Manuka 20+honey.Its antibacterial abi lity against Staphylococcus aureus is ranked from strong to weak as follows:Malus bhutanica honey>Pinus honey≥Manuka 20+honey>Manuka 12+honey>St robilanthes oresbia honey.There was a significant positive correlation between the antioxidant ability of Apis cerana honey with antibacterial activity and colour(r>0.832,P<0.05);The total phenol content was positively correlated with color(r=0.837,P<0.01),and the conductivity was positively correlated with maltose content(r=0.910,P<0.01).
