摘要
为使学生掌握24 h回顾法,在“食品营养与健康”课程实践教学环节中,以膳食调查这一章节内容为基础,结合WS/T 426.1—2013《膳食调查方法 第1部分:24小时回顾法》设计综合实验项目“在校大学生膳食调查设计实施及分析”。实验内容包含连续3 d的24 h回顾法膳食调查、膳食调查数据的计算、膳食结构分析、能量与各种营养素分析、DRIs比较评价、膳食调查报告与汇报6个部分。通过综合性实验的实施,结果显示,学生学习积极性得到提升,重点知识掌握程度加深,学生营养知识的运用能力和语言表达等综合素质获得提升。
To help students master the 24 h recall method,in the practicum of the course"Food Nutrition and Health,a comprehensive experiment of 24 h recall method is designed based on the contents of dietary survey and the WS/T 426.1-2013 Dietary Survey Method Part 1:24-Hour Recall Method,titled 24-hour Recall Method Report for College Students".The experiment is designed to continuous 3 d 24 h dietary survey,calculation of dietary survey data,dietary structure analysis,analysis of energy and various nutrients,comparative evaluation of DRIs and dietary survey report.The experimental results show that through comprehensive experiments,students have a high enthusiasm for learning and a good grasp of key knowledge.At the same time,it also improves students'comprehensive qualities such as nutrition knowledge application ability and expression and communication.
