摘要
紫薯作为甘薯的一个特殊品种,兼具粮食作物、药用作物和经济作物的特点。阐述了紫薯的主要营养物质及加工方面的研究进展,对今后紫薯产业发展提供更好的依据与启发。
As a special variety of purple potato,it has the characteristics of food crops,medicinal crops and economic crops.This paper focused on the main nutrients of purple potato and the research progress in processing,which provided better basis and inspiration for the development of purple potato industry in the future.
