酸枣多糖的提取、纯化及生物活性的研究进展 被引量:1

摘要 酸枣主要分布在中国北方,其果肉营养丰富,种仁可入药,具有较高的营养价值和药用价值。多糖是酸枣中重要的活性成分之一,其具有结构复杂、生物活性强等特性。近年来国内外研究表明,酸枣多糖具有抗氧化、抗炎、免疫调节、促益生菌生长等作用,这些发现增强了酸枣在食品和医药领域的应用潜力。该文综述了酸枣多糖的提取、纯化方法,解析了酸枣多糖的特征结构,概述了酸枣多糖的生物活性,并对其相应的构-效关系进行讨论,以期为酸枣多糖的深度开发及利用提供理论参考。 Wild jujube is mainly distributed in northern China.The wild jujube sarcocarp is rich in nutrition and the wild jujube seed could be used in medicine,which has high nutritional and medicinal value.Polysaccharides is an important active ingredient in wild jujube,with the characteristics of complex structure and strong biological activity.Recent research in China and abroad showed that the wild jujube polysaccharides has the effects of anti-oxidation,anti-inflammation,immune regulation and promoting probiotic growth,which could stimulate the application potential of wild jujube polysaccharides in food and medicine fields.This paper reviewed the methods of extraction and purification,analyzed the characteristic structure,summarized the biological activity of wild jujube polysaccharides and discussed the corresponding structure-activity,providing a theoretical reference for further development and application of wild jujube polysaccharides.
