河北省肉品加工业发展现状及趋势

Present Situation and Development Trend of Meat Processing Industry in Hebei Province

摘要 由于饲料原料充足、京津冀肉类需求旺盛、国家政策扶持、产业基础雄厚等因素,河北省生鲜肉产量一直保持在全国前12位。但河北省并不是肉类加工强省,本文根据产业调研的数据,结合《中国统计年鉴》、河北省市场监督管理局等网站的数据,分析了河北省屠宰分割企业品质保持技术应用现状,整理了河北省肉类企业的地理分布,总结了河北省肉类加工的深度,归纳了消费者对生鲜肉品质的接受度。结果表明,河北省肉品加工业存在企业规模小、品牌缺乏、品质保持关注度低、冷链断链现象多发、冻肉比例多、深加工程度低及标准体系不完善等产业问题,严重制约了河北省肉品加工业的健康、快速发展。在此基础上,提出了需要提高产业对肉与肉制品品质提升的关注度、完善生鲜肉及其制品品质标准体系、提高肉制品深加工程度等发展建议,以期为河北省肉品加工业健康发展提供借鉴和参考。 Due to factors such as sufficient feed raw materials,strong demand for meat in Beijing,Tianjin and Hebei,national policy support,and a strong industrial base,Hebei province’s fresh meat production has remained in the top 12 in China.However,Hebei province is not a strong province for meat processing.Based on the data of industry research,combined with the data of“China Statistical Yearbook”,market supervision and administration of Hebei province and other websites,this paper analyzed the technical status of Hebei province’s slaughterhouse and segmentation enterprises;sorted out the geographical distribution of meat enterprises in Hebei province;summarized the depth of meat processing in Hebei province;summarized consumer responses to meat quality.The results showed that there were some industrial problems in the meat processing industry in Hebei province,such as small scale of enterprises,lack of brands,low attention to quality,frequent occurrence of cold chain temperature fluctuations,high proportion of frozen meat,low degree of deep processing,and imperfect standard system,which seriously restricted the healthy and rapid development of the meat processing industry in Hebei province.On this basis,development suggestions such as the need to improve the industry’s attention to the quality enhancement of meat and meat products,to improve the quality standard system for fresh meat and its products,and to improve the degree of deep processing of meat products are put forward,with a view to providing lessons and references for the healthy development of the meat processing industry in Hebei province.
