摘要
该研究采用高通量测序技术对西北地区的成熟人工窖泥和优质老窖泥细菌群落结构进行差异分析。结果表明,人工窖泥和老窖泥丰富度指数之间并无显著差异(P>0.05),而多样性指数显著低于老窖泥(P<0.05);在门水平上,人工窖泥在厚壁菌门(Firmicutes)的相对丰度显著高于老窖泥(P<0.05),变形菌门(Proteobacteria)丰度并无显著差异(P>0.05);拟杆菌门(Bacteroidetes)丰度显著低于老窖泥(P<0.05);在属水平上,人工窖泥中厌氧杆菌属(Anaerosalibacter)和Tepidanaerobacter的丰度显著高于老窖泥(P<0.05),产己酸菌属(Caproiciproducens)的丰度显著低于老窖泥(P<0.05)。老窖泥中酿酒微生物功能菌的菌群多样性及相对丰度均高于人工窖泥。
Bacterial community structure of mature artificial pit mud and high-quality old pit mud in Northwest region was analyzed by high-throughput sequencing technology.The results showed that there was no significant difference in richness index between artificial and old pit muds(P>0.05),while the diversity index of artificial pit mud was significantly lower than that of old pit mud(P<0.05).At the phylum level,the relative abundance of Firmicutes in artificial pit mud was significantly higher than that in old pit mud(P<0.05),while the abundance of Proteobacteria was not significantly different(P>0.05).The abundance of Bacteroidetes was significantly lower than that of old pit mud(P<0.05).At the genus level,the abundance of Anaerosalibacter and Tepidanaerobacter in artificial pit mud was significantly higher than that of old pit mud(P<0.05),and the abundance of Caproici-producens was significantly lower than that of old pit mud(P<0.05).The diversity and relative abundance of brewing microbial functional community in old pit mud were higher than those in artificial pit mud.
