酵母单细胞蛋白及其在动物生产中的应用

摘要 以酵母菌为发酵菌种、各种农业和工业废弃物为基质,通过固态发酵或深层发酵制备营养价值高的单细胞蛋白(SCP)作为替代传统豆粕的新型蛋白质来源,在单胃动物和反刍动物生产上已获得广泛应用。酵母SCP的开发和大规模生产对缓解世界范围内蛋白质紧缺、资源浪费和生态环境恶化的现状具有重要意义。本文主要综述了生产SCP的酵母菌种类、可供利用的原料、生产工艺及其在畜禽养殖中的应用效果,旨为酵母SCP的研发和饲粮豆粕减量替代提供参考。 Single cell protein(SCP)with high nutritional value is prepared by solid state fermentation or submerged fermentation with yeast as fermentation strain and various agricultural and industrial wastes as substrate,which has been widely used in the production of monogastric animals and ruminants as a new protein source instead of traditional soybean meal.The development and large-scale production of yeast SCP is of great significance to alleviate the current situation of protein shortage,resource waste and ecological environment degradation worldwide.In this paper,the types of yeast producing SCP,the available raw materials,the production process and its application in livestock and poultry breeding were reviewed,in order to provide references for the development of yeast SCP and the substitution of dietary soybean meal reduction.
