摘要
为评估是否可以通过红肉蜜柚果实的外观品质(如质量、体积、果皮厚度)对风味品质(可溶性固形物、总酸、糖酸比)进行评价。本文以红肉蜜柚为试材,对果实的主要品质指标,如单果质量、体积、果皮厚度、可溶性固形物含量、总酸、糖酸比等进行测评和比较。结果表明,红肉蜜柚不同果实的可溶性固形物含量波动较大,而总酸含量相对稳定;红肉蜜柚的外观指数(质量、体积)与风味指数(可溶性固形物、总酸、糖酸比)之间的相关作用较弱,但红肉蜜柚的果皮厚度与可溶性固形物含量之间存在显著相关性;在红肉蜜柚的果实品质评价时可以以果皮厚度作为初筛指标确定红肉蜜柚的品质优劣。
To evaluate that if the flavor quality(soluble solids content,total acid content,the ratio of sugar to acid)of meizhou red honey pomelos can be judge by apperance quality(single fruit weight,volume,pericarp thickness).‘Hongroumiyou’of Meizhou city were selected as experiment materials,the main quality characteristics of pomoles were detected and analyzed,such as single fruit weight,volume,pericarp thickness,soluble solids content,total acid content,the ratio of sugar to acid.‘Hongroumiyou’of Meizhou city were large fluctuations of soluble solids content,while total acid content was litter dispersed.There was litter correlation between apperance quality(weight,volume)and the flavor quality,but there was significant correlation between the pericarp thickness and soluble solids content.The pericarp thickness could be used for the evaluation of pomelo fruit quality.
