摘要
益生菌对人体有诸多益生功能,其中抗氧化性是其重要的益生功能之一。传统发酵蔬菜作为重要的发酵制品,其中含有大量的益生功能菌,对传统发酵蔬菜中微生物分布情况、益生功能菌的筛选及其抗氧化性的研究进行了综述,以期在今后的相关研究中提供参考。
Probiotics have many prebiotic functions for human body,among which antioxidation is one of its important prebiotic functions.As an important fermented products,traditional fermented vegetables contain a lot of probiotics.In this paper,the distribution of microorganisms in traditional fermented vegetables,the screening of probiotic bacteria and the research on their antioxidation were reviewed,with a view to providing reference for future research.
