摘要
“食品工艺学实验”作为食品科学与工程专业的一门专业核心课程,旨在开展不同类型食品加工的实验教学,突出“做中学、做中教”,培养学生掌握不同类型食品加工的基本操作技能,激发学生学习的主观能动性,使学生具备相应食品加工的研究路线选择和实验方案设计能力。如何在这一培养过程中巧妙地融入“案例元素”,发挥新工科背景下“食品工艺学实验”的引领作用,已然成为高教工作者亟需努力探索的方向。
As a professional core course of food science and engineering,Food Technology Experiment aims to carry out experimental teaching of different types of food processing,highlight“learning by doing and teaching by doing”,training students to master the basic operating skills of different types of food processing,stimulating students'subjective initiative in learning,and enable students to have the ability to select corresponding research routes and design experimental schemes for food processing.How to skillfully integrate“case elements”into this training process and give play to the leading role of Food Technology Experiment under the background of new engineering has become an important topic that educators need to seriously explore.
