摘要
没食子酸具有抗氧化、抗炎等生理活性,在各领域有巨大的应用潜力,制备方式多样。本文通过查阅没食子酸相关文献,对没食子酸的结构、来源、生产、制备方式及在食品中应用研究进展进行了综述,为没食子酸的工业生产及广泛应用提供理论参考。
Gallic acid has physiological activities such as antioxidant and anti-inflammatory,and has enormous potential for application in various fields,with various preparation methods.This article reviews the research progress on the structure,source,production,preparation methods,and application in food of gallic acid by consulting relevant literature,providing theoretical reference for its industrial production and widespread application.
