白芸豆桑叶控糖片配方研究及控糖效果评价

摘要 目的:以白芸豆提取物、L-阿拉伯糖和桑叶提取物为原料,添加一定量异麦芽酮糖醇、植物粉、硬脂酸镁等辅料,研制一款具有控糖效果的压片糖果。方法:以α-淀粉酶、α-葡萄糖苷酶抑制活性及感官评价为指标,通过单因素及正交试验,确定白芸豆桑叶控糖片原料最佳配比。对最优配方制得的控糖片进行人体试食试验,观察餐后血糖值,评价控糖效果。结果:白芸豆提取物比例为30%、L-阿拉伯糖比例为10%、桑叶提取物比例为7%,按此配方制得的控糖片色泽、口味俱佳,经人体试食后,食用控糖片较未食用控糖片的餐后血糖面积减小33%。结论:食用控糖片可以有效调节餐后血糖水平,食用后不会引起血糖骤然波动,具有良好的市场开发前景。 Objective:Using white kidney bean extract,L-arabinose and mulberry leaf extract as raw materials,and adding a certain amount of isomaltulose,plant powder,magnesium stearate and other auxiliary materials,to develop a tablet candy with sugar control effect.Method:Using the inhibition activity ofα-amylase,α-glucosidase and sensory evaluation as indicators,the optimal ratio of raw materials for white kidney bean and mulberry leaf sugar control tablets was determined through single factor and orthogonal experiments,and the formula was determined.The sugar control tablets prepared according to this formula were subjected to human trial feeding experiments to observe postprandial blood sugar levels and evaluate the sugar control effect.Result:30%of white kidney bean extract,10%of L-arabinose and 7%of mulberry leaf extract.The sugar control tablets prepared according to this formula had good color and taste.After human test,the area of postprandial blood sugar after taking the sugar control tablets was 33%less than that without taking the sugar control tablets.Conclusion:Eating sugar control tablets can effectively regulate postprandial blood sugar levels,without causing sudden fluctuations in blood sugar after consumption,and has good market development prospects.
