物流运输振动对哈密瓜理化特性的影响

摘要 为探索运输振动对哈密瓜理化特性的影响,实验选取哈密瓜为研究对象,模拟卡车运输振动实验,结束后,将哈密瓜放在23℃的环境中贮藏28 d,每隔4 d测定一次哈密瓜的失重率、可溶性固形物、硬度、色差指标,并对各项理化特性指标进行相关性分析。结果表明,在贮藏期间,与对照组相比,振动处理组的可溶性固形物和硬度均低于对照组,失重率和色差均高于对照组;哈密瓜的水分含量会影响其可溶性固形物、硬度和色差。说明振动会促进哈密瓜的生理活性,在实际运输过程中可通过采取抑制哈密瓜生理活性的方法减缓振动对其理化特性的影响。 To explore the impact of transportation vibration on the physicochemical properties of cantaloupe,the experiment selected cantaloupe as the research object and simulated truck transportation vibration experiments.After the experiment,cantaloupe were stored at 23℃for 28 days,and the weight loss rate,soluble solids,hardness,color difference indicators of cantaloupe were measured every 4 days.Correlation analysis was conducted on various physicochemical characteristics indicators.The results showed that during storage,the soluble solids and hardness of cantaloupe in the vibration-treated group were lower than those in the control group,and the weight loss and color difference were higher than those in the control group.The moisture content of cantaloupe affects its soluble solids,hardness and color difference.Therefore,vibration promotes the physiological activity of cantaloupe,and the effects of vibration on its physicochemical properties can be mitigated by taking measures to inhibit the physiological activity of cantaloupe during the actual transport process.
