摘要
通过文献调阅的方式整合前人对营养挂面的研究成果,对营养挂面的种类及生产工艺进行综述,为营养挂面的产业发展提供理论基础。营养挂面种类较为丰富,常见的有杂粮类、蔬菜类、豆类、药食同源类、藻类和营养素强化类。营养挂面的生产主要包括和面、熟化、压延和干燥4大工序。目前在营养挂面的研发过程中,关于含有药用植物的保健型营养挂面的研究较少,增加药用植物类营养挂面的开发可拓展营养挂面的市场。
This paper integrates the previous research results of nutritional noodles through literature review,and summarizes the types and production processes of nutritional noodles,providing a theoretical basis for the industrial development of nutritional noodles.There are many kinds of nutritional noodles,such as grains,vegetables,beans,medicine and food homology,algae and nutrient fortification.The production of nutritional noodles mainly includes four processes:mixing,curing,calendering and drying.At present,in the research and development process of nutritional noodles,there are few studies on health-care nutritional noodles con-taining medicinal plants.Increasing the development of medicinal plant nutritional noodles can expand the market of nutritional noodles.
