摘要 [目的]探究不同用途雪茄烟叶的显著差异化学成分及其对感官质量的影响。[方法]以国内外不同用途的茄芯、茄衣和茄套为研究对象,使用方差分析和偏最小二乘PLSR回归分析,分析不同用途雪茄烟叶的显著差异化学成分及其对感官质量的影响。[结果]新烟草碱、棕榈酸甲酯、棕榈酸、天冬氨酸、2,3-联吡啶、硬脂酸、4-甲基戊酸、Mg 2+对茄芯干净度、平衡感、刺激性、甜润度等有显著影响;2,3-联吡啶、Mg 2+、4-甲基戊酸、新烟草碱、叶黄素对茄衣干净度、丰富度、灰色、凝灰度、成熟度等有显著影响。棕榈酸、硬脂酸、Mg 2+、4-甲基戊酸、新烟草碱、叶黄素对茄套燃烧性、刺激性、丰富感等有显著影响。[结论]该研究为不同用途雪茄烟叶的质量评价提供了科学依据。 [Objective]To explore the significant differences in chemical components of cigar leaves with different uses and their effects on sensory quality.[Method]Taking fillers,wrappers and binder of different uses at home and abroad as the research objects,the differential chemical components and their effects on sensory quality were analyzed using variance analysis and partial least squares regression analysis.[Result]Anatabine,methyl palmitate,palmitic acid,aspartic acid,2,3-bipyridine,octadecanoic acid,4-methylvaleric acid,Mg 2+had a significant effect on cleanliness,balance,irritation and sweetness of the filler.2,3-bipyridine,Mg 2+,4-methylvaleric acid,anatabine and lutein had a significant effect on cleanliness,richness,gray,coagulation gray and maturity of the wrapper.Palmitic acid,octadecanoic acid,Mg 2+,4-methylvaleric acid,anatabine and lutein had a significant effect on the burnability,irritation and richness of the binder.[Conclusion]The study provides a scientific basis for the quality evaluation of cigar leaves with different uses.
